To prepare the strawberry sorbet: Mix all the ingredients together and freeze in the ice cream machine until you have a creamy mass. Freeze in a container in the deep freeze.
To prepare the strawberry mousse: Beat the egg white and sugar until stiff. Dissolve the softened gelatine into a little strawberry liqueur and stir into the strawberry purée. Fold in the beaten egg white and whipped cream. Divide between the Savoiardi, put into a mould and stand in the refrigerator until firm.
To prepare the strawberry soup: Mix all the ingredients together and beat until it has the consistency of a milk shake, then season to taste with the strawberry liqueur and lemon juice.
